Head Chef Will Stanyer artfully combines fresh and intense flavours to create seasonally based menus that are written around locally sourced, organic and free-range produce. The lavish Brighton Pavilion-inspired interior gives a modern, decadent edge, yet manages to achieve a genuine homely feel, and guests are made to feel even more welcome by the attentive, friendly and knowledgeable staff.
